Chocolate Fudge Pudding

This recipe is derived from the fudge pudding recipe from an NZ Rally recipe cookbook from the 1980s.

Method Overview

  1. Mix dry ingredients for base
  2. Add milk and butter to make a thick cake paste
  3. Coat with mixed dry ingredients for sauce
  4. Add boiling water
  5. Heat in an oven for about 40 minutes
Chocolate coconut fudge balls on a tray, about half-way through the freezing process. They were finger-formed into balls about 3cm in diameter.

mix brown sugar and cocoa together, then sprinkle over the base mixture. Pour over the boiling water.

Serves about 5 people.

Method

  1. Preheat oven to 170 °C
  2. Mix flour, cocoa, baking powder, salt and sugar together
  3. Add the milk and mix to form a thick paste
  4. Add the melted butter and mix together
  5. Pour into a ~2L oven dish
  6. Mix brown sugar and cocoa together
  7. Sprinkle brown sugar mixture over the base mixture
  8. Pour boiling water over the brown sugar mixture, using the back of a spoon to reduce local water pockets
  9. Bake uncovered in the 170 °C preheated oven for 40 minutes, until the pudding has just reached the peak of its rising
